If you notice a working bartender with a plastic swizzle stick in his mouth, it may be a way of keeping track of how much he is stealing.  He bites down on the stick every time he does not ring up a sale, putting a notch in it. Then he simply counts up the notches to figure out much money he can take out for himself. Tosses out the swizzle stick and leaves no record.
